Farmers’ Market Pickled Cucumbers

In continuing our recipe series starring foods found at our local Farmers’ Markets, I am thrilled to bring you another yummy recipe that supports our local farmers while keeping our kitchen nice and cool. This recipe is low carb, sugar-free, keto, and gluten free.

Cucumbers are a great find at the Farmers Market and work in many salad variations offering a cool, crisp crunch perfect for hot summer days. At only 4-5 grams of carbs per cucumber, this vegetables is great for people with diabetes and low carb dieters.

This recipe, using cucumbers found at the Farmers Market, works as a fantastic summer snack. You can easily ‘spice up’ or ‘sweeten’ this recipe for your family’s personal taste buds. The best part? This summer recipe is a no-cook recipe keeping our energy cost down.


  • 1-2 cucumbers, sliced very thin
  • 1 cup of water
  • 1/3 cup vinegar (we used white vinegar, but you can use rice or apple cider vinegar)
  • 1 tsp Redmond Sea Salt (can eliminate if concerned about sodium levels)
  • Optional ingredients: Additional vegetables (bell pepper, onion, green onion), hot sauce, lower sodium seasoning, Swerve, fresh dill


  • Combine all ingredients in a medium bowl or mason jar.
  • Cover and refrigerate.

Calories: 10.4, Total fat: 0g, Cholesterol: 0mg, *Sodium: 520mg, Carbs: 2.2g, Fiber: 0mg, Protein: 0g.

*Can use a lower sodium seasoning.
